Steps
1. Season the chicken thigh with salt and pepper.
2. Heat olive oil in a skillet over medium heat. Add chicken thigh, skin-side down, and cook until golden and crispy, about 5-7 minutes.
3. Flip the chicken and cook the other side for 5 minutes.
4. In a small bowl, mix jam, soy sauce, garlic, and chili flakes if using.
5. Spoon the jam mixture over the chicken and cook for another 2-3 minutes, spooning glaze on top until the chicken is cooked through and the glaze is sticky.
6. Remove the chicken and keep warm.
7. In the same pan, add spinach or kale and sauté until wilted, about 2 minutes.
8. Serve the glazed chicken thigh over the sautéed greens.
