Rustic Bread and Onion Salad

Steps

1. Toast the bread cubes in a dry skillet over medium heat until golden and crisp, about 5 minutes. Set aside. 2. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and pepper to create the dressing. 3. Place the sliced onions in a bowl and toss with half of the dressing to soften the sharpness. 4. Combine the toasted bread cubes, marinated onions, and chopped parsley in a salad bowl. 5. Drizzle the remaining dressing over the salad and toss gently to combine. 6. Let the salad sit for 5 minutes before serving to allow flavors to meld.
