Steps

1. Clean the cactus paddle by removing thorns and slicing off the edges. Rinse thoroughly. 2. Boil the cactus paddle pieces in salted water for 5 minutes to remove sliminess. Drain and pat dry. 3. Using a sharp knife, finely dice (brunoise) the cactus paddle into small cubes. 4. Combine the diced cactus, tomato, red onion, jalapeño, and cilantro in a bowl. 5. Drizzle lime juice and olive oil over the mixture, then add salt to taste. 6. Toss gently to combine all ingredients well. 7. Serve immediately as a fresh salad or appetizer.
