Steps

1. Preheat the oven to 400°F (200°C). 2. Toss the cubed sweet potatoes with half the olive oil, salt, and pepper. 3. Spread the sweet potatoes on a baking sheet and roast for 20 minutes until tender and lightly browned. 4. In a small bowl, whisk together the remaining olive oil, maple syrup, cinnamon, salt, and pepper to make the dressing. 5. In a salad bowl, combine the mixed greens, roasted sweet potatoes, dried cranberries, and toasted pecans. 6. Drizzle the dressing over the salad and gently toss to coat. 7. Serve immediately and enjoy the warm and fresh flavors.
