Steps
1. Rinse quinoa thoroughly under cold water.
2. Cook quinoa in 1/2 cup boiling water for about 12 minutes or until water is absorbed.
3. Let quinoa cool slightly.
4. In a bowl, combine cooked quinoa, orange segments, grapefruit segments, and chopped mint.
5. Drizzle olive oil over the salad and toss gently.
6. Season with salt and pepper to taste.
7. Sprinkle toasted almonds on top before serving.
