Steps
1. In a small bowl, mix olive oil, lemon juice, minced garlic, oregano, salt, and pepper.
2. Marinate the chicken breast in the mixture for at least 15 minutes.
3. Rinse quinoa under cold water. In a small pot, bring water to a boil, add quinoa, reduce heat, cover, and simmer for 12-15 minutes until water is absorbed.
4. While quinoa cooks, heat a non-stick pan over medium heat and cook the chicken breast for 5-6 minutes per side until cooked through and golden.
5. Fluff cooked quinoa with a fork and mix in cherry tomatoes, cucumber, parsley, olive oil, and lemon juice.
6. Slice the chicken breast and serve alongside the quinoa salad.
