Steps
1. Rinse the rice under cold water until water runs clear.
2. In a small pot, bring water to a boil. Add rice, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and rice is tender.
3. While rice cooks, heat olive oil in a small pan over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
4. Once rice is cooked, fluff with a fork and stir in the sautéed garlic and olive oil.
5. Add lemon juice, lemon zest, and chopped parsley to the rice. Mix well.
6. Season with salt and pepper to taste.
7. If using, stir in cooked chickpeas or top with grilled chicken.
8. Serve warm and enjoy your zesty lemon garlic herb rice bowl.
