Steps
1. Preheat the oven to 180°C (350°F).
2. In a bowl, mix the crumbled feta cheese, chopped parsley, salt, and pepper.
3. Brush a small round baking pan or a deep skillet with olive oil.
4. Lay one sheet of phyllo dough into the pan, letting the edges hang over the sides.
5. Brush the phyllo with olive oil or melted butter.
6. Place another sheet of phyllo dough and brush with oil.
7. Spread half of the cheese mixture evenly over the dough.
8. Place thin tomato slices over the cheese layer.
9. Cover with another sheet of phyllo dough, brush with oil.
10. Add the remaining cheese mixture and cover with two more phyllo sheets, brushing each with oil.
11. Fold the overhanging edges of phyllo over the top and brush again with olive oil.
12. Beat the egg and brush it on the top layer for a golden crust.
13. Place a heat-safe lid or plate over the pan to weigh down the börek.
14. Bake for 30-35 minutes until golden and crispy.
15. Remove from the oven, let it cool slightly before cutting and serving.
