Steps
1. In a small bowl, mix cornstarch with 2 tablespoons of coconut milk until smooth.
2. In a small saucepan, combine the remaining coconut milk, cocoa powder, sugar, vanilla extract, and salt.
3. Heat the mixture over medium heat, stirring constantly until it begins to simmer.
4. Slowly whisk in the cornstarch mixture and continue stirring until the pudding thickens, about 3-4 minutes.
5. Remove from heat and pour into a serving dish.
6. Let it cool to room temperature, then refrigerate for at least 1 hour.
7. Before serving, garnish with grated dark chocolate or coconut flakes.
