Steps

1. Preheat the oven to 375°F (190°C). 2. In a bowl, mix olive oil, minced garlic, chopped rosemary, chopped thyme, salt, and pepper. 3. Rub the herb mixture over the rabbit leg. 4. Place the rabbit leg on a baking tray. 5. In a separate bowl, toss the cubed potatoes with olive oil, salt, pepper, and rosemary. 6. Arrange the potatoes around the rabbit on the baking tray. 7. Roast in the oven for 30-40 minutes or until the rabbit is cooked through and the potatoes are crispy. 8. Serve hot and enjoy!
