Herb-Roasted Rabbit with Garlic and Rosemary

Steps

1. Preheat your oven to 375°F (190°C). 2. In a small bowl, mix the minced garlic, chopped rosemary, olive oil, salt, and black pepper to create a marinade. 3. Rub the marinade all over the rabbit leg, ensuring it's well coated. 4. In a roasting pan, place the rabbit leg, and pour the vegetable broth and lemon juice around it. Optionally add sliced carrots and diced potatoes. 5. Cover the pan with aluminum foil and roast in the oven for 30 minutes. 6. Remove the foil and roast for an additional 15-20 minutes, or until the rabbit is cooked through and has a nice golden color. 7. Let it rest for a few minutes before serving.
