1. Preheat the oven to 400°F (200°C). 2. In a small bowl, mix olive oil, rosemary, thyme, minced garlic, salt, and pepper to create a marinade. 3. Rub the marinade all over the lamb chops and let them sit for 15 minutes. 4. While the lamb marinates, place the diced potato in a pot of boiling water and cook until tender (about 15 minutes). 5.
