Steps

1. Rinse lentils thoroughly and cook in boiling water for about 15 minutes until tender. Drain and set aside. 2. Heat vegetable oil in a pan over medium heat. 3. Add chopped onion and garlic, sauté until translucent. 4. Add diced carrot and cook for 3-4 minutes. 5. Stir in frozen mixed vegetables and cook until heated through. 6. Add cooked lentils to the pan and stir well. 7. Season with soy sauce, salt, and pepper. 8. Cook for another 2-3 minutes, mixing everything together. 9. Serve hot with rice or bread if desired.
