Steps
1. Preheat grill or grill pan to medium-high heat.
2. Season the chicken breast with salt, pepper, and a drizzle of olive oil.
3. In a small bowl, mix honey and Dijon mustard to create the glaze.
4. Grill the chicken for 5-6 minutes on each side until cooked through.
5. During the last 3 minutes, place peach slices on the grill to get light char marks.
6. Brush the chicken with honey glaze during the last 2 minutes of grilling.
7. Remove chicken and peaches from grill; let chicken rest for 2 minutes.
8. Serve chicken topped with grilled peaches and a sprinkle of fresh thyme if desired.
