1. Heat the vegetable oil in a large skillet over medium heat. 2. Add the minced garlic and sauté until fragrant, about 30 seconds. 3. Add the shrimp and cook until pink and opaque, about 2-3 minutes. 4. Stir in the peas and carrots, and cook for another 2 minutes. 5.
