Garlic Butter Beef Steak with Herb Roasted Vegetables

Steps

1. Preheat oven to 200°C (400°F). 2. Toss carrot slices, broccoli florets, and cherry tomatoes with olive oil, dried thyme or rosemary, salt, and pepper. Spread on a baking sheet and roast for 15 minutes. 3. While vegetables roast, season beef steak generously with salt and pepper. 4. Heat a skillet over medium-high heat. Add butter and minced garlic. 5. When butter is melted and fragrant, add the steak. Cook for 3-4 minutes on each side or until desired doneness. 6. Remove steak and let rest for 5 minutes. 7. Remove vegetables from oven. 8. Plate steak with roasted vegetables, garnish with fresh parsley if desired, and serve hot.
