Egg and Vegetable Stir Fry

Steps

1. Heat the olive oil in a large skillet over medium-high heat. 2. Add the onions and peppers and sauté for 3-4 minutes, or until the vegetables begin to soften. 3. Push the vegetables to the side of the skillet and add the egg to the center, stirring occasionally until it is cooked to your liking. 4. Add the tomatoes to the skillet and cook for an additional minute. 5. Drizzle the soy sauce over the top and stir to combine. 6. Season with salt and black pepper to taste. 7. Serve over rice, pasta, or quinoa.
