Steps
1. Preheat the oven to 160°C (320°F).
2. In a bowl, beat the eggs gently with sugar, salt, and vanilla extract until combined.
3. Add the coconut milk and mix well.
4. Mash the durian flesh until smooth, then fold it into the egg mixture.
5. Pour the mixture into a small oven-safe ramekin.
6. Place the ramekin in a baking dish and add hot water to the dish until it reaches halfway up the sides of the ramekin.
7. Bake for 30-35 minutes or until the custard is set but still slightly jiggly in the center.
8. Remove from the oven and let cool before serving. Optionally chill in the fridge for an hour for a firmer texture.
