Pink Bean Sweet Porridge

A comforting and nutritious sweet porridge made from pink beans, gently simmered with coconut milk and lightly sweetened to create a creamy, naturally pink dessert perfect for any time of the day.

Steps

1. Rinse the pink beans thoroughly and soak them in water for at least 2 hours or overnight. 2. Drain the beans and place them in a pot with 250ml fresh water. 3. Bring to a boil, then reduce heat and simmer gently for about 40 minutes or until beans are soft. 4. Add coconut milk, brown sugar, and a pinch of salt to the pot. 5. Continue to simmer for another 10 minutes, stirring occasionally, until the porridge thickens to your desired consistency. 6. Stir in vanilla extract if using. 7. Remove from heat and pour into a serving bowl. 8. Garnish with toasted sesame seeds or coconut flakes if desired. 9. Serve warm or chilled.
