1. Preheat the oven to 375°F (190°C). 2. In a bowl, mix together the chopped spinach, cream cheese, minced garlic, salt, and pepper. 3. Cut a pocket in the chicken breast and stuff it with the spinach mixture. 4. Heat olive oil in an oven-safe skillet over medium-high heat. 5. Sear the stuffed chicken breast for 2-3 minutes on each side. 6. Transfer the skillet to the oven and bake for 20-25 minutes or until the chicken is cooked through. 7. Serve hot and enjoy!
