Coconut Curry Chicken

Steps

1. Heat vegetable oil in a pan over medium heat. 2. Add chopped onion and minced garlic, sauté until fragrant. 3. Dice chicken breast into cubes and add to the pan, cook until browned. 4. Sprinkle curry powder over the chicken, stir well. 5. Pour in coconut milk, season with salt and pepper. 6. Simmer for 15-20 minutes until chicken is cooked through and sauce thickens. 7. Serve hot over rice or with naan bread.
