Steps
              1. Heat olive oil in a large pot over medium heat. 
2. Add onion, garlic and carrots, sauté for 5 minutes until vegetables soften. 
3. Stir in mint, cinnamon, orange zest and stock, bring to a boil. 
4. Reduce to low heat, simmer for 15 minutes. 
5. Blend until desired consistency is achieved. 
6. Taste and season with salt and pepper.
