Carrot Fried Rice

This easy and simple fried rice dish is a great way to incorporate your favorite vegetables into your meal.

Steps

1. Heat the oil in a medium skillet over high heat. 2. Add the eggs and cook them until they're scrambled. 3. Reduce the heat to medium and add the onion, carrots, and tomatoes. 4. Cook until the onion is soft and translucent, about 5 minutes. 5. Increase the heat to high and add the rice, stirring for about 3 minutes. 6. Add salt and pepper to taste. 7. Reduce the heat to medium-low and cover the skillet. 8. Allow the rice to cook until it's soft, about 20 minutes. 9. Serve the fried rice immediately and enjoy.

1 Carrot, sliced 1 Egg 1 Onion, chopped 1/2 cup of Rice 1/2 can of diced Tomatoes 1 tbsp of Olive oil Salt and Pepper to Taste
