Beef and Vegetable Skillet with Cherry Tomato Sauce

A hearty one-pan meal combining tender beef, sautéed potatoes, carrots, and a fresh cherry tomato sauce thickened with a touch of flour. Perfect for a comforting and balanced dinner.

Steps

1. Heat olive oil in a skillet over medium heat. 2. Add diced potatoes and sliced carrots; cook for 8-10 minutes until slightly tender. 3. Push vegetables to the side and add beef strips; season with salt and pepper. 4. Cook beef until browned on all sides, about 4-5 minutes. 5. Mix flour into the beef and vegetables, stirring well to coat. 6. Add halved cherry tomatoes and pour in water or broth. 7. Stir everything together and simmer for 5-7 minutes until the sauce thickens and vegetables are fully cooked. 8. Season with additional salt, pepper, and thyme if using. 9. Serve hot, spooning sauce over the beef and vegetables.
