Baked Tomato with Quinoa

A hearty one-dish meal perfect for lunch or dinner. Oven-baked tomatoes filled with quinoa, herbs and spices for extra flavor.

Steps

1. Preheat oven to 400°F. 2. Cut the tomatoes in half and scoop out the insides. Place halves cut side up in a baking dish. 3. In a small bowl, mix together the cooked quinoa, garlic, parsley, oregano and cayenne pepper. 4. Divide the quinoa mixture evenly among the tomatoes halves. Drizzle each tomato half with olive oil. 5. Bake in preheated oven for 15-20 minutes, or until the tomatoes are baked through and the quinoa is lightly browned. 6. Serve hot. Enjoy!
