Steps
1. Prepare the edible cookie dough bites: Mix softened butter, brown sugar, vanilla extract, and salt until creamy.
2. Stir in heat-treated flour and mini chocolate chips until combined.
3. Roll tiny bite-sized balls (about 1/2 inch) and place them on parchment paper. Refrigerate for 15 minutes.
4. In a bowl, combine vanilla cake crumbs with cream cheese frosting until mixture holds together.
5. Take a small portion of cake mixture and flatten it into your palm.
6. Place one chilled cookie dough bite in the center and carefully wrap the cake mixture around it, shaping into a ball.
7. Insert a lollipop stick into each cake ball and place them on a parchment-lined tray.
8. Chill the cake pops in the refrigerator for 30 minutes to firm up.
9. Melt white chocolate chips in a microwave-safe bowl in 20-second intervals, stirring until smooth.
10. Dip each cake pop into the melted white chocolate, ensuring full coverage.
11. Add sprinkles if desired before the coating sets.
12. Place cake pops upright in a styrofoam block or stand and refrigerate until the coating hardens, about 15 minutes.
13. Serve chilled and enjoy!
