Steps
1. Heat olive oil in a skillet over medium heat.
2. Add sliced onions and sauté until translucent and slightly caramelized, about 5 minutes.
3. Add sliced carrots to the skillet and cook for 5-7 minutes until they start to soften.
4. Stir in chopped tomatoes and cook for another 3 minutes until the tomatoes break down slightly.
5. Mix ketchup with a tablespoon of water and add to the skillet, stirring to coat the vegetables evenly.
6. Season with salt, pepper, and oregano if using. Cook for another 2 minutes to blend the flavors.
7. Serve warm as a light main dish or alongside rice or bread.
