Steps
1. Preheat oven to 200°C (390°F).
2. Thinly slice the potato into chips, toss with 1 tbsp olive oil, smoked paprika, sugar, and salt.
3. Spread chips on a baking tray and bake for 20-25 minutes, turning halfway, until golden and crispy.
4. Tear bread into small pieces and pulse in a food processor to make coarse crumbs.
5. Heat 1 tbsp olive oil in a pan over medium heat, add bread crumbs and toast until golden and crispy, then set aside.
6. Season gambas with salt and quickly sauté in the same pan for 2-3 minutes per side until pink and cooked through.
7. Plate the chips, top with sautéed gambas, and sprinkle toasted bread crumbs over.
8. Optionally, serve with a lemon wedge for squeezing over the top.
