Steps

1. In a bowl, whisk the eggs until well beaten. Season with salt and pepper. 2. Heat olive oil in a non-stick skillet over medium heat. 3. Add chopped spinach to the skillet and sauté until wilted, about 1-2 minutes. 4. Pour the beaten eggs over the spinach, tilting the pan to distribute evenly. 5. Cook for 2-3 minutes until the edges start to set. 6. Sprinkle the crumbled feta cheese on top and fold the omelette in half. 7. Cook for another 1-2 minutes until the eggs are fully cooked and the feta melts slightly. 8. Slide the omelette onto a plate and garnish with fresh herbs if desired.
