Steps
1. Preheat the oven to 400°F (200°C).
2. In a bowl, combine zucchini, carrot, bell pepper, and cherry tomatoes.
3. Add minced garlic, olive oil, salt, pepper, thyme, and rosemary. Toss well to coat.
4. Spread the vegetables evenly on a baking sheet lined with parchment paper.
5. Roast in the oven for 20-25 minutes, stirring halfway through, until vegetables are tender and lightly browned.
6. Remove from oven and serve warm.
