1. Heat olive oil in a skillet over medium heat. Add the diced potatoes and cook until golden brown and crispy, about 8-10 minutes, stirring occasionally. 2. Add minced garlic and continue cooking for 1-2 minutes until fragrant. 3. Push the potatoes to one side of the skillet and add the ground pork. Cook until browned and fully cooked, about 5-7 minutes. 4. Stir in the diced tomato and cook for an additional 2-3 minutes until softened. 5. In a separate bowl, beat the egg with a pinch of salt and pepper. Pour it over the pork and vegetable mixture in the skillet, stirring gently to scramble the egg until just set. 6.
