Steps
1. Preheat your oven to 375°F (190°C).
2. Cut the bell pepper in half lengthwise and remove seeds and membranes.
3. In a bowl, combine cooked quinoa, chopped spinach, diced tomatoes, garlic powder, onion powder, salt, and pepper. Mix well.
4. Drizzle the olive oil into the mixture and stir until all ingredients are well combined.
5. Stuff each half of the bell pepper with the quinoa mixture, pressing down gently to pack it in.
6. Place stuffed peppers on a baking tray and bake for 25-30 minutes until the peppers are tender.
7. If using, sprinkle nutritional yeast on top before serving.
8. Garnish with fresh herbs and enjoy your healthy meal!
