Quinoa and Black Bean Stuffed Bell Peppers

Steps

1. Preheat your oven to 375°F (190°C). 2. In a small saucepan, combine quinoa and vegetable broth or water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until the quinoa is fluffy and liquid is absorbed. 3. While the quinoa cooks, slice the top off the bell pepper and remove the seeds and membranes. 4. In a mixing bowl, combine cooked quinoa, black beans, corn, cumin, paprika, salt, pepper, cilantro, and lime juice. 5. Stuff the bell pepper with the quinoa mixture, packing it tightly. 6. Place the stuffed pepper in a baking dish and cover with foil. Bake for 25-30 minutes until the pepper is tender. 7. Remove from the oven, let cool slightly, and enjoy your healthy meal!
