1. Season the pork tenderloin medallion with salt, pepper, and thyme. 2. Heat olive oil in a skillet over medium-high heat. Sear the pork for 3-4 minutes on each side until golden brown and cooked through. Remove and keep warm. 3. In the same skillet, add butter and sliced onions. Cook over medium heat, stirring frequently, until onions are soft and caramelized, about 10-12 minutes. 4. Sprinkle brown sugar over the onions and stir to combine. Cook for an additional 2 minutes. 5. Add peach slices to the skillet and cook for 3-4 minutes until slightly softened. 6. Drizzle balsamic vinegar over the peaches and onions, stir gently, and cook for another minute. 7. Plate the pork tenderloin and top with the peach and caramelized onion mixture. Serve immediately.
