Lemon Herb Rice Pilaf

1. Rinse the rice under cold water until the water runs clear. 2. In a saucepan, heat olive oil over medium heat. Add the rice and sauté for 2-3 minutes until slightly toasted. 3. Pour in the vegetable broth, salt, and pepper. Bring to a boil. 4. Once boiling, reduce heat to low, cover, and simmer for 15 minutes. 5. Remove from heat and let it sit, covered, for another 5 minutes. 6. Fluff the rice with a fork and stir in lemon juice, lemon zest, parsley, and dill before serving.
