Steps
1. Peel and dice the sweet potato. Boil in salted water until tender, about 15 minutes.
2. While sweet potato cooks, season chicken breast with salt and pepper.
3. Heat olive oil in a pan over medium heat. Cook chicken breast until golden and cooked through, about 5-6 minutes per side.
4. In the last 2 minutes of cooking, brush the jam over the chicken to create a glaze. Add fresh thyme if using.
5. Drain sweet potato and mash with butter, salt, and pepper to taste.
6. Serve the jam-glazed chicken on a bed of sweet potato mash.
