Italian Tomato and Cheese Soup

Steps

1. Heat the olive oil in a pot over medium heat. Add the diced onion and sauté until translucent. 2. Add the diced tomatoes and cook for a few minutes until they start to soften. 3. Pour in the vegetable broth and bring to a simmer. 4. Meanwhile, cook the pasta according to package instructions in a separate pot. 5. Once the pasta is cooked, drain and set aside. 6. Tear the bread into small pieces and add it to the soup. Stir well to combine. 7. Allow the soup to simmer for about 10 minutes, until the bread has softened and thickened the soup. 8. Season with salt and pepper to taste. 9. Serve the soup in bowls, topped with grated cheese and a sprinkle of fresh herbs if desired.
