Steps

1. Preheat your oven to 375°F (190°C). 2. In a small bowl, mix olive oil, minced garlic, rosemary, thyme, lemon zest, salt, and pepper. 3. Rub the herb mixture all over the rabbit leg, ensuring it's well coated. 4. In an oven-safe skillet, heat a little oil over medium heat and sear the rabbit leg for about 3-4 minutes on each side until golden brown. 5. Pour the chicken broth into the skillet and place lemon slices on top of the rabbit. 6. Transfer the skillet to the preheated oven and roast for 25-30 minutes, or until the rabbit is cooked through and reaches an internal temperature of 160°F (70°C). 7. Remove from the oven, let it rest for a few minutes, then serve hot, garnished with additional herbs if desired.
