Steps

1. Peel and cube the potato, then boil in salted water until tender (about 15 minutes). 2. In a small bowl, mix rosemary, thyme, minced garlic, salt, and pepper. 3. Rub the lamb chop with olive oil and then coat evenly with the herb mixture. 4. Heat a skillet over medium-high heat and sear the lamb chop for about 3-4 minutes on each side until desired doneness. 5.
