Steps
1. Preheat a grill pan over medium heat.
2. Brush the chicken breast with half the olive oil, season with salt and pepper.
3. Grill chicken for about 5-6 minutes on each side until fully cooked and juices run clear.
4. While chicken cooks, brush peach halves with remaining olive oil.
5. Grill peach halves for 2-3 minutes on each side until grill marks appear and peaches soften slightly.
6. In a small bowl, whisk together honey, Dijon mustard, lemon juice, and a pinch of salt and pepper.
7. Slice the grilled chicken and peaches.
8. In a plate, arrange mixed salad greens, top with sliced chicken and peaches.
9. Drizzle the honey mustard dressing over the salad.
10. Sprinkle crumbled feta cheese on top if using.
11. Serve immediately.
