Grape and Goat Cheese Stuffed Chicken Breast

Steps

Preheat your oven to 375°F (190°C). In a small bowl, mix the goat cheese and halved grapes together. Slice a pocket into the side of the chicken breast and stuff it with the grape and goat cheese mixture. Drizzle olive oil over the stuffed chicken and season with salt and pepper. Place in a baking dish and bake for 25-30 minutes or until the chicken is cooked through. Let it rest for a few minutes before slicing. Garnish with fresh thyme if desired and serve.
