Steps

1. Preheat the oven to 425°F (220°C). 2. Wash and scrub the potatoes, then cut them into small cubes. 3. In a mixing bowl, combine the minced garlic, grated Parmesan cheese, olive oil, salt, and black pepper. 4. Add the potato cubes to the bowl and toss them until they are evenly coated with the garlic and Parmesan mixture. 5. Transfer the potatoes to a baking sheet lined with parchment paper. 6. Roast the potatoes in the preheated oven for 25-30 minutes, or until they are golden brown and crispy. 7. Remove from the oven and garnish with fresh parsley. 8. Serve hot and enjoy!
