Steps

1. Rinse the rice under cold water until water runs clear. 2. In a small pot, bring water or vegetable broth to a boil. 3. Add the rice, reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed and rice is tender. 4. While the rice cooks, heat olive oil in a skillet over medium heat. 5. Add minced garlic and sauté for 1 minute until fragrant. 6. Add sliced mushrooms, season with salt and pepper, and cook until mushrooms are browned and tender, about 5-7 minutes. 7. Once the rice is cooked, fluff it with a fork and add it to the skillet with mushrooms. 8. Stir in butter and cook for another 2 minutes, mixing well to combine all flavors. 9. Garnish with chopped fresh parsley if desired and serve warm.
