Fried Rice with Veggies

A delicious and nutritious fried rice dish with eggs, onions, carrots, and rice. Perfect for a weeknight dinner or a meal prepped lunch.

Steps

1. Preheat a large skillet over medium high heat. Melt the butter in the pan. 2. Add the diced onions and carrots and cook for 3-4 minutes until they start to soften. 3. Add the cooked rice to the pan and stir. You want to really get everything mixed together. 4. Crack the egg into the pan and stir it in with the rice, making sure to evenly distribute it throughout. 5. Cook for about 10 minutes, stirring frequently, until the egg and rice have cooked through. 6. Serve and enjoy!
