Steps
1. In a small bowl, mix diced apple, brown sugar, cinnamon, and lemon juice. Cook over low heat until apples soften and caramelize, about 5 minutes. Set aside.
2. In a mixing bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, and nutmeg.
3. In another bowl, combine buttermilk, milk, half beaten egg, and melted butter.
4. Pour wet ingredients into dry ingredients and stir gently until just combined; some lumps are okay.
5. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.
6. Pour 1/4 cup batter onto skillet for each pancake. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
7. Flip and cook the other side until golden brown, about 2 more minutes.
8. Serve pancakes stacked, topped generously with warm spiced apple compote.
