1. Heat oil in a pan over medium heat. 2. Add chopped onion, garlic, and ginger; sauté until fragrant and onions are translucent. 3. Stir in curry powder and turmeric; cook for 1 minute. 4. Add diced chicken and cook until browned on all sides. 5. Pour in coconut milk and water; stir well. 6. Simmer on low heat for 10-12 minutes until chicken is cooked through and sauce thickens. 7. Season with salt to taste. 8. Garnish with fresh coriander before serving.
