Steps

1. Preheat your oven to 400°F (200°C). 2. Slice the onion thinly. 3. In a pan, heat olive oil over medium heat and add the sliced onions. 4. Cook the onions for about 15 minutes, stirring occasionally, until they are soft and caramelized. 5. Roll out the puff pastry on a baking sheet and score a border around the edge. 6. Spread the caramelized onions on the pastry, leaving the border clear. 7. Crumble the goat cheese over the onions and drizzle with honey. 8. Beat the egg and brush it over the pastry border. 9. Bake in the preheated oven for 20-25 minutes, or until golden brown. 10. Allow to cool slightly before slicing and serving.
