Steps
1. Parboil the diced potatoes in boiling water for 3 minutes, then drain and pat dry.
2. Heat half the oil in a non-stick pan over medium-high heat. Add the potato cubes and fry until golden and crispy. Remove and set aside.
3. In the same pan, add remaining oil and sauté garlic until fragrant.
4. Add the sliced beef, season with salt and pepper, and cook until browned.
5. Push beef to one side, crack the egg into the pan, scramble gently until just cooked.
6. Add the cooked rice, soy sauce, and crispy potatoes back into the pan. Stir well to combine and heat through.
7. Adjust seasoning if needed. Garnish with chopped green onions if desired. Serve hot.
