Steps

1. Heat the vegetable oil in a pan over medium heat. Add the diced onion and minced garlic, and sauté until the onion becomes translucent. 2. Add the curry powder, cumin, coriander, turmeric, and red chili powder to the pan. Stir well to combine the spices with the onion and garlic. 3. Peel and slice the ripe banana into thin rounds. Add the banana slices to the pan and gently stir to coat them with the spice mixture. 4. Pour in the coconut milk and season with salt. Stir everything together and let the curry simmer for about 5 minutes, until the flavors meld together. 5. Remove the banana curry from heat and garnish with fresh cilantro. 6.
