An easy and flavorful vegetable stirfry that is perfect for a quick lunch or dinner.

Steps

1. Heat the vegetable oil in a large skillet over medium heat. 2. Add the minced garlic and cook for 1 minute. 3. Add the mixed vegetables and cook for 3-4 minutes or until the vegetables soften. 4. Add the vegetable broth and stir to combine. 5. Cover with a lid and let the vegetables simmer for 8-10 minutes. 6. Remove the lid, add the soy sauce and red chili flakes and stir to combine. 7. Cook for an additional 2-3 minutes or until the vegetables are cooked through.
